 Homemade Potato Salad!

This recipe is plant-based, so it is safe for some allergies! But feel free to substitute any of the ingredients for your own diet preferences! :)


Ingredients:

  • 5 pounds of red potatoes
  • Two 10 oz containers or diced mirepoix mix OR around 1 cup diced yellow onion, 1 cup diced carrots, and 1 cup diced celery.
  • 3 cups plant-based mayonnaise 
  • 1/2 cup mustard 
  • 1 1/2 tbsp pepper 
  • 1 1/2 tbsp salt
  • 2 tbsp paprika

Instructions:
  1. Wash the potatoes
  2. Remove blemishes and cut large ones to fit in the pot. You can also skin the potatoes if you prefer. 
  3. Place potatoes in a large pot. You may use two pots if needed. Add water to the pots until potatoes are covered. 
  4. Boil potatoes on medium-high heat for about 20 minutes or until soft. 
  5. Drain potatoes.
  6. Once cooled, cut potatoes into small pieces. 
  7. Place potatoes in a large bowl. 
  8. Combine yellow onions, carrots, and celery with the potatoes. Mix well. 
  9. Add mayonnaise, mustard, pepper, salt, and paprika. Mix until well combined.
  10. Place in fridge for at least an hour to let cool 
  11. Enjoy :)
